做法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏(yì )米。用(yòng )清水把(bǎ )陈皮泡软,拍(pāi )裂一(yī )小块姜(jiāng ),热锅,用姜块(kuài )在锅上擦一(yī )遍,放两勺(sháo )油(yóu ),待油六成热下(xià )鱼(yú ),煎(jiān )至(zhì )微(wēi )黄。煮(zhǔ )沸(fèi )瓦煲里的(de )清水(shuǐ ),放(fàng )入煎煮好的鲫鱼(yú )和(hé )其他材料(liào ),武火煮沸,转中(zhōng )小火煲(bāo )一(yī )个(gè )半小(xiǎo )时(shí ),下盐调味即可(kě )品尝。
