做法:洗净宰好鲫鱼,洗(xǐ )净淮(huái )山(shān )和(hé )薏(yì )米(mǐ )。用清(qīng )水把(bǎ )陈(chén )皮泡软(ruǎn ),拍裂一小(xiǎo )块(kuài )姜,热(rè )锅,用姜块在锅(guō )上(shàng )擦一遍(biàn ),放两(liǎng )勺油,待油六成热下鱼(yú ),煎至微黄。煮沸(fèi )瓦煲里(lǐ )的清水,放入煎煮好(hǎo )的鲫鱼和其(qí )他材料,武(wǔ )火(huǒ )煮沸,转中(zhōng )小火煲一(yī )个半小(xiǎo )时(shí ),下盐调味即可品(pǐn )尝。
