做法:春笋切成(chéng )片(piàn )后加少(shǎo )许(xǔ )盐捞(lāo )出后(hòu )用清水浸泡,生姜切(qiē )片,葱(cōng )切成段。锅(guō )烧热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟左(zuǒ )右。再(zài )加(jiā )入(rù )生抽(chōu )、老抽、蚝油翻炒均匀(yún ),加入(rù )少(shǎo )量清(qīng )水半掩住春(chūn )笋,盖上锅盖大(dà )火煮开后转(zhuǎn )中(zhōng )火(huǒ )。煮到水快熬干的(de )时候加(jiā )入盐,翻(fān )炒(chǎo )均(jun1 )匀稍收汁(zhī )时(shí )盖上锅(guō )盖(gài )焖。
